Almond ROCA Salted Caramel Bars
This award winning recipe features classic Almond ROCA.
Ingredients
Filling
14 oz caramels
1/3 C heavy cream
Crust
1 C butter, softened
1 C packed brown sugar
1 C finely chopped Almond ROCA
1 egg yoke
1 tsp vanilla extract
1/4 tsp salt
2 C all purpose flour
Topping
12 oz chocolate chips
1/4 C finely chopped almonds
course sea salt
Directions
Grease a 9 x 13 pan and pre-heat oven to 350°
Beat butter, brown sugar, vanilla extract and egg in a large bowl. Then stir in flour, salt and Almond ROCA
Press dough into prepared pan and bake for 25-30 minutes or until crust is light brown.
While the crust is baking, melt caramels in a medium saucepan, over low heat, with heavy cream, stirring constantly.
Pour the caramel mixture over the baked crust and bake in the oven for another 12 minutes. Edges should appear bubbly.
Cool slightly and pour melted chocolate chips over bars. Sprinkle chopped almonds and a little coarse sea salt on top.
