Almond ROCA Butter Balls
These buttery little delights are a great holiday snack, perfect for potlucks and family gatherings.

Yield: 24 balls
Ingredients
1 1/3 cups all-purpose flour, sifted
1/4 cup granulated sugar
1/4 teaspoon salt
1 4oz stick of sweet butter, softened
Grated rind of one lemon
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup, approximately 4 ounces, finely ground Almond ROCA candy
Directions
Preheat oven to 350 degrees.
In an electric mixer bowl, blend flour, sugar, and salt.
Cut in butter, lemon rind, and extracts. Mix until soft, rather dry dough is formed.
Gently add Almond ROCA.
Refrigerate dough for 15 minutes.
Roll into small balls and place on an ungreased baking sheet.
Bake for 15 minutes.
